Salads

Summer Salad
Organic greens, fresh strawberries, watermelon, red onion and feta cheese, with a honey poppy seed vinaigrette.

Spinach Salad
Spinach, hard boiled free range eggs, mushrooms, boar bacon, smoked cheddar with a balsamic vinaigrette.

Grilled Caesar Salad 
(can also be prepared traditionally)
Organic romaine lettuce, buttered croutons, boar bacon & freshly grated Parmesan cheese.

Appetizers

Three Cheese Salsa Bake
Smoked cheddar, goat & cream cheese baked with salsa and served with organic corn tortillas.

Jumbo sea Scallops
Seared to perfection and served with a creamy leek & boar bacon sauce.

Black tiger prawns
Pan seared with onions, garlic, bell peppers, pesto and  a Cinzano liquor Deglaze.

Organic Basmati rice infused with coconut milk, onions and topped with toasted coconut.

Papas con Leche
Alberta potatoes sauteed with onions, peanuts, chilies, feta & finished with cream.

Seasonal Vegetable Platter
A colorful array of vegetables that are fresh and in season, cooked with different techniques to embellish the unique textures and flavors, all arranged beautiful on a platter.

Polenta
A cornmeal patty served over coconut Basmati rice and seasoned black beans. Topped with hot buttered salsa.

Franco Pollo
Organic chicken sauteed with onions, tomato, lemon juice and finished with fresh cream.

Chorizo Sausage
Chorizo sausage sauteed with onions, tomato, cilantro and finished with red wine.

Rack of Lamb
Grilled then topped with a herb de provence crust, roasted and served with mint sauce.

Halibut & Mango (seasonal)
Two fillets, crusted in organic nuts and seeds. Served on a mango, bell pepper, ginger, sauce.

Cowboy Platter
A large platter of perfectly cooked proteins (4) of your choice.

Duck Breast
With a Grande Marni-er and wild berry glaze.
